Finca El Cedro is a small, family-run farm in El Huabo, San Ignacio, Peru, owned by Orlando Jimenez and Artemisa García Huaman, who work alongside their children, Leiser and Darwin. The family has long focused on specialty coffee, using careful lot separation and organic farming methods. Their 5-hectare farm sits at 1,825 meters above sea level in a region known for producing high-quality, distinctive coffees.
This lot is 100% Bourbon and is fully washed to highlight its clarity and sweetness. Cherries are hand-picked at peak ripeness and pulped the same day, then fermented in tile-lined tanks. After washing, the beans are dried on raised beds inside a solar hoop house, where they are regularly turned to ensure even drying and consistent quality.
The result is a sweet and well-balanced coffee, reflecting both the Bourbon variety and the careful cultivation at Finca El Cedro.
